The Original Jefferson’s Restaurant opened in Jacksonville, AL. on September 15, 1991. I had graduated from Jacksonville State University in 1990 and thought that the college desperately needed a local hangout. After putting my college degree to no use for a year, I decided the time was right. Begging my parents for a loan and selling my treasured baseball card collection for the financing. The restaurant finally opened with a tiny menu in 1991. Jefferson’s was an immediate hit. People loved the huge juicy Burgers, fresh gulf oysters and world famous- delicious wings. Over the next 8 years we expanded our menu and developed a dedicated “Cult” like following. In 1999, I partnered up with long time employee and friend Sean McCooey to expand the Jefferson’s brand.

We opened our second store location in June of 2000 in Lawrence, Kansas. Once again Jefferson’s was an instant hit. Located on historic Massachusetts St. in downtown Lawrence. Jefferson’s has blended nicely with the eclectic mix of restaurants and pubs and has been a Lawrence favorite for 10 years. In 2004, Sean found the perfect spot for another Jefferson’s in the beautiful old Mason’s Building in historic downtown Rome, Ga. The business took off and continues to be a staple in downtown Rome. Building on 15 years of name recognition, the Gadsden location opened in 2006. Jefferson’s helped revive Broad Street, bringing a family-friendly atmosphere to downtown Gadsden. That same year, loyal Rome customers Patti and Jim Gridstaff approached us about opening a Jefferson’s of their own. We opened our first franchise in Belleville, IL. Soon the franchise bug bit and concept caught on and locations in Albertville, and Oxford, Al., Cartersville, Ga. and Mascoutah, IL. opened their doors. Thanks to our loyal customers, we now have 10 Jefferson’s and continue to grow. We would love to serve our world famous wings in your home town.
